Step-by-Step Healthy Dinner: Dynamite Halibut
Dynamite Halibut with Broccoli,
Pine Nuts & Caramelized Onions
Step 1: Gather Ingredients
2 lbs. Halibut (or other fish)
Broccoli
Pine Nuts
Red Onion
Green Onions
Balsamic Vinegar
Sour Cream
Lemon
Paprika
Sesame Oil
Soy Sauce
Fresh or Minced Garlic
Black Pepper
Brown Sugar
Tangy Mustard
Step 2: Pre-Heat the oven to 375 degrees
Step 3: Whip up a Dynamite Aioli
8 oz. Sour Cream
1/2 Lemon
1/2 tsp Sesame Oil
1/2 tsp Soy Sauce
1/2 cup Minced Garlic
1 tsp Black Pepper
1 tsp Paprika
Pinch Brown Sugar
2TBSP Tangy Mustard
Combine all of the ingredients above into a medium sized bowl and whip with a spoon or fork until all of the elements of the mixture are smooth. Take your pinky finger and dip it into the Aioli. If it tastes good move on to the Fish.
Step 4: Prepare Broccoli, Pine Nuts & Onions
Chop up red onion into small pieces
Chop garlic
meausre out 1 cup of pine nuts
Step 5: Slap that Fish!
Take the Halibut filets and place skin-down onto a tin-foil covered cooking sheet
Spread the aioli generously over the top of the halibut filets
set cooking timer to 12 minutes and put halibut in the oven
Step 6: Cookin’ some Veggies
Add olive oil to a frying pan
Heat up oil for 3 minutes over medium-high heat
Cook garlic and onions to frying pan for 5 minutes
Add 1/4 cup balsamic vinegar to onions and garlic
Add Broccoli pieces and pine nuts
Cover frying pan, change to medium heat and let simmer
Step 7: Browning the top of the Halibut
When the 12 minute timer beeps take the fish out of the oven
Change the oven setting to BROIL
Move the oven rack to the highest possible level
Put the Halibut back into the oven fo 8-10 minutes (Until the top of the Aioli-covered fish is bubbly and brown)
Step 8: Plate that Meal Baby!
Check the to make sure the fish is flaky, tendery and qhite in the middle
Make sure the broccoli is as soft as you like it
dump a heap of Broccoli, Pine nuts and caramelized onions on your plate
Gently slide a spatula under the halibut filets and place them on the plates
Use the extra aioli for dipping sauce!
